Ingredients:
1kg chicken thigh fillet cut into 2cm cubes
1 medium onion
2 tsp salt
2 tsp dried basil
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp ground black pepper
1 tsp minced garlic
2 tbsp olive oil
1 400g canned chopped tomatoes
1 140g can tomato paste
1 cup chicken stock
1 cup white wine
1/4 cup sliced black olives
1/4 cup sundried tomato strips
Method:
Heat oil in pan on a medium setting.
Add onion, garlic & chicken and cook until browned.
Add herbs & seasonings and cook a further 2 minutes.
Add tomato paste and cook a further 2 minutes.
Add wine, stock, canned tomatoes, olives, & sundried tomatoes.
Cover and simmer for approximately 1:30 hours until chicken is tender.
Serve with pasta.
