Ingredients:
150g flour
25g rice flour
50g caster sugar
100g soft butter
Method:
Preheat oven to 140°C.
Place all ingredients into a mixing bowl and rub until a dough consistency is achieved.
Place into a 20cm cake tin or a shallow slice tin and press until dough is equal in height throughout tin.
Pierce entire surface with a fork.
Place into oven for 45-50 minutes until pale golden on top.
Cut into wedges or squares while still warm.
Dust with icing sugar.
